Sweet, Savory and Crispy! Yeah, that’s what I’m talking about. This
sophisticated appetizer is so simple to make, and so light you won’t ruin
your appetite for dinner. |
Preheat oven to 400 degrees
Spread fig preserve over the entire surface of lavash bread. Sprinkle shredded mozzarella cheese evenly over fig preserve. Top with goat cheese, caramelized red onion and parmesan cheese. On a cornmeal dusted baking sheet, bake in the center of a preheated 400 degree oven for 10-12 minutes. Cut into nine appetizer size, or 18 hors d’oeuvres.
In a large sauté pan heat butter and olive oil to medium high. When butter is bubbling add onion. The onion should brown slightly and slowly. Adjust the temperature to avoid burning. Sauté onion for approximately 12 minutes, slowly, stirring on occasion to achieve a sweet caramelization. Use right away or cool and store in an airtight container in the refrigerator for up to one week.
